Man, did I need a huge glass of this smoothie this morning. There has been a lot going on lately. I can’t believe it’s November, what happened to October? It was a blur of events I tell ya. There was a lot of driving involved and I don’t want to have to drive that much in one month for a while, and by a while I mean never-ever. We had a week of half days at school so Mac’s schedule was completely trashed and he wouldn’t take a nap the entire week, joy. Then I signed up for this wonderful adventure in blogging called Online BlogCon. I have to talk about this for a minute because it was THE best experience. It was organized by Dorothy from Crazy for Crust and Ashton from Something Swanky and wow, they did a fantastic job! Basically, it was a jam-packed three-day online conference with so much information that my head is still reeling, I mean that in a good way =) We had classes on subjects ranging from blog design to photography to how to make money from your blog and that is just a few examples. There was so much more involved, you truly have to experience it for yourself. Not only did I learn more than I could have imagined but was fortunate enough to meet and interact with some truly amazing, kind and generous women. I am so there next year and you should be, too. You will not regret it. The week after BlogCon brought Halloween and then, poof, no more October. Now we are already in the second week of November and the holidays are just around the corner, yikes.
This smoothie is a great way to start your day. The holidays are so much fun but honestly, they can also be stressful and hurried and sometimes you need a little extra help to keep you going. Forget about the horrid picture, it doesn’t do this juice justice. It is packed with goodness that your body will devour.
Kiwi is awesome. It is delicious and along with the orange, lemon and lime juice, gives this drink some zip and just the right amount sweetness, all while adding good amounts of vitamin C and fiber. Kiwi is also a good way to get vitamin K which is good for your brain. I like to use coconut water in this drink because its so hydrating, great for a morning after all the holiday cheers, I mean cheer. The chia seeds will give you a good dose of Omega-3’s and they are yummy. You should try making a pudding out of them. Ginger gives this juice some warmth and can help with indigestion. Turmeric has so many benefits. I use it for the anti-inflammatory properties and it makes you all glowy, not like radioactive glowy like wow, you look beautiful glowy. ‘Nuff said.
Re-New You Green Smoothie
Ingredients:
- Coconut water
- 1 tablespoon chia seeds
- 2 handfuls of greens, rinsed, my favorites are romaine and kale
- 2 kiwis, peeled and roughly chopped
- 1 orange, peeled and roughly chopped
- 1-inch knob of ginger, peeled
- Juice of 1 lime
- Juice of 1/2 a lemon
- 1/2 tespoon turmeric
Directions:

First, soak the chia seeds in the coconut water until they are softened and start to gel, about 5 minutes

While the chia seeds are soaking, wash your greens and peel and chop your fruit. Put the greens in your blender and then add the kiwis, orange, ginger, lime and lemon juice and turmeric. Give the soaking chia seeds a stir to break them up a bit and pour the coconut water, chia seed mixture into the blender.

Blend until smooth. Enjoy!

This looks so yummy! I have not used Chia Seeds before so I’m excited to try this. Could you tell me how much coconut water you would use to soften the Chia Seeds? I can’t wait to try this! Thank you for sharing the recipe!
Chia seeds are super versatile so you can do a lot with them. I used about 1 cup of coconut water to soak the seeds and you can add more liquid to your blender to get the consistency you want. I hope you enjoy this:)
